Enate Chardonnay 234
Enate Chardonnay 234 is a wine from D.O. Somontano made exclusively from 100% Chardonnay grapes. This young white wine is “thoughtfully crafted, breaking away from the traditional fragility associated with Spanish white wines.”
The winemaking process is extensive. Unlike other cases, the harvest takes place at night; then, upon arrival at the winery, the grapes are crushed and passed through a pneumatic press for skin maceration, which lasts for 5 hours. This is followed by the removal of solid residues through natural decantation at 10ºC.
Subsequently, the must is fermented in stainless steel tanks at a controlled temperature using carefully selected yeasts, all at 16ºC. The clarification process is also crucial before bottling, with the wine being bottled for 6 months before being released to the market.
Enate Chardonnay 234 is a white wine with a clear, pale straw-yellow color and greenish reflections. Intense on the nose, it features aromas of green apple, ripe peach, fennel, guava, and passion fruit. On the palate, it is complex, broad, rich, and has a clean, fresh finish with a prolonged sweetness.
Best enjoyed well-chilled at a temperature of 9º-10ºC. This wine pairs deliciously with seafood appetizers, smoked salmon, and other starters like brothy seafood rice dishes.
