Reymos Moscatel Sparkling born from the idea of ​​diversifying products 100% Muscatel Roman variety. Muscat is a variety deeply rooted in our area thanks to its microclimate, soil and proximity to the sea, which allows the perfect development of the vegetative cycle of this variety. Offers consumers a different type of wine for its flavor profile and balanced sugar alcohol binomial.
The harvest is completely manual and from this moment only receives physical treatments: soft crushing, cold maceration to extract aromas typical of the variety, obtain the flower must (released by the gentle breaking of the grain), fermentation at 16º C in deposits called special autoclaves which allow the CO2 produced during fermentation is dissolved naturally in wine and the conservation of flavors extracted in maceration, refrigeration to preserve the amount of residual sugars own wort. Bottled in isobaric conditions to maintain the CO2 dissolved during fermentation.
It differs from other sparkling wines by the processing method (Charmat) that is more natural since start of must and wine not already developed (Champanois) to which is added tirage liqueur and expedition liqueur.
