Payment of Chaplains Crianza
Payment of Chaplains Crianza has a selected harvest in early October. Once in the winery reception of the alcoholic fermentation is initiated in a controlled manner, with addition of selected yeast best our vineyards, for 30 days with daily pumping.
Malolactic fermentation is carried out without addition of bacteria and hold at 20 is annealed for 24 days, controlling the levels of malic acid and lactic acid. For 12 months the wine rests in French oak barrels of 300 liters of selected grain.
