QS2 Sardonia
Sardonia Quinta produces wines of Castilla y León by biodynamic methods in order to achieve a good balance between soil, climate, and environment strain. QS2 Sardonia is made with 60% fine Tinto 22% Cabernet Sauvignon, 11% Petit Verdot, 5% Syrah, 1% Cabernet Franc, 1% Malbect.
A special wine made with own vineyards (22 ha) in Villabáñez and Sardon de Duero, province of Valladolid, Castile and Leon. The farm consists of 11 different soils of calcareous origin and is located on the slopes of southern exposure of the Douro River, at an altitude between 760 and 830 meters above the level of the sea.
The clusters were selected throughout the summer until its entry into cellar. Have blended the different varieties before fermentation, giving priority to respect the floor and to the optimal maturity. Encubaron grapes with 10-30% whole bunches (depending on the floor), hard to boost the aromatic part and provide tension and excitement in mouth mature scrapes. Fermentation was carried out with yeasts through Cuba feet. During maceration was played with temperature and time of maceration for a sensitive and accurate extraction by infusion. Malolactic took place partly in barrels and partly in deposit.
Raising 14 months was 85% in French oak barrels one and two wines, and 15% in 1200 liter foudres French oak. a light wine filtration was performed before bottling.
