Aráiz payments Aging is characterized by a delicate production and aging separately for each variety, made in barrels of French and American oak for 10 months, with the O.D. Navarre. After that, the final “coupage” which will go to the bottle, where it rests for several months before going to the market is selected. It is made from grapes Syrah, Merlot, Tempranillo and Cabernet Sauvignon.
Preparation: The harvested grapes, cluster separation and barreling under control of temperature and time in the prefermentative phase. Alcoholic fermentation maintained to optimize the extraction processes during maceration or contact the must-wine with skins and different times around 15 days on average. Racking and subsequent malolactic before passing through American and French oak barrels for 10 months. Finally it has remained 6 months in stainless steel tanks before bottling.
